What is The Chef's Diaries?

What happens in the restaurant industry no longer stays in the restaurant industry. This is no ordinary job it is a lifestyle.


Food articles come and go but unlike those, what you are about to read actually comes from people within “the life.” People who became indoctrinated in the “lifestyle”. People who do not get sick and stay home as often as the regular 9-5 workforce. People who get it done. People who find a way. People who suck it up when things get really bad. For the majority of those in the life you work or you do not get paid. There is no calling in sick on St. Patty’s Day so I can booze and take a selfie. You work. Holidays are for making bank not bitching about having to go in. Vacation pay? That is called saving up to take a few days off.


What I’m giving you here is a look into our life from our perspectives and our experiences. I’ve talked with fellow restaurant “lifers” to have them share anecdotes, views and details from their careers while lifting up the curtain to my 30 plus years in the life. What follows is an unadulterated look into our family. Behind the scenes. Behind the line. Behind the bar. Cue the *Dragnet/Law and Order reference.

The stories you are about to read are true. Only the names have been changed to protect the innocent or not so innocent. Enjoy and don’t forget to tip your musicians, chefs, bartenders and servers!
